People who won't cook seafood at home usually aren't being lazy about it. They're nervous, and honestly that's fair. Fish costs more than chicken, it cooks fast, and the window between perfect and ruined is narrow. One dry salmon fillet and somebody swears it off for a decade. It's fixable.
